Cozmo's Kitchen - Cozmo's Spicy Vodka Chicken

The flame of the habanero and the twang of vodka balanced by a creamy cucumber sauce makes a chicken you won't soon forget.

Well, the Fourth of July has come and gone and grilling season is well underway. Here's a little recipe I came up with a few years ago to beat the same 'ole chicken blues. Try it out and let me know what you think.

Cozmo's Spicy Vodka Chicken

(WARNING - This recipe has a flame factor... Beware the habenero!!!)

1 large onion
3 fresh habanero peppers
3 carrots
2 tsp salt
2 tsp black pepper
1 tsp garlic
1 tsp cilantro
1 tsp cumin
3 cups coconut milk
1 cup vodka
4 chicken breasts
5 cucumbers
3 cups sour cream

Finely dice a large onion and three habaneros (remove the habanero seeds unless you want to catch your mouth on fire). Shred 3 carrots and add them to the veggie mix. Season the mix with salt, pepper, garlic, cilantro and cumin. Pour 3 cups coconut milk and 1 cup of vodka over your spiced veges and put it in the fridge for an hour to let the flavors mix.

Remove the skin from 4 large chicken breasts. Lay the breasts into a baking pan. Pour your spicy vodka marinade over the chicken. Cover the pan with plastic and let it marinade overnight.

While you are waiting; peel 5 large cucumbers, cut each one into large chunks and drop into your blender. Add 3 cups sour cream to the cucumbers along with a little salt, pepper and garlic. Blend until smooth and refrigerate overnight.

Fire up the grill and cook your spicy vodka chicken. Top each breast with a dollop of the cool, cucumber cream sauce to balance out the taste. MMMMMMMMMM - good...

Wrap up some fresh asparagus in aluminum foil with a spritz of olive oil and a pinch of sea salt and throw it on the grill. It makes a perfect side dish for your chicken.
